Curried Pumpkin Apple Soup

Ingredients
- 2 cups chopped pumpkin (14oz can)
- 1/4 cup butter
- 1 clove garlic chopped
- 1 onion chopped
- 1 leek, white part chopped
- 1 tablespoon curry powder
- 1 large apple
- 4 cups chicken stock
- 1 cup whipping cream
- salt and pepper
- apple wedges
- green onion strips
Instructions
- In a soup pot, heat butter until sizzling.
- Add garlic, onion, leek and apple, sauté until softened.
- Stir in curry powder and cook for 1 min.
- Add pumpkin and stock, and bring to a boil stirring occasionally.
- Reduce heat and simmer for 20 min or until vegetables are tender.
- Transfer to a food processor/blender and purée until smooth.
- Return to pot, stir in cream and simmer for 3 min or until heated through.
- Season with salt and pepper.
- Serve garnished with apple wedges and green onion.
