Curried Pumpkin Apple Soup

Instructions

  1. In a soup pot, heat butter until sizzling.
  2. Add garlic, onion, leek and apple, sauté until softened.
  3. Stir in curry powder and cook for 1 min.
  4. Add pumpkin and stock, and bring to a boil stirring occasionally.
  5. Reduce heat and simmer for 20 min or until vegetables are tender.
  6. Transfer to a food processor/blender and purée until smooth.
  7. Return to pot, stir in cream and simmer for 3 min or until heated through.
  8. Season with salt and pepper.
  9. Serve garnished with apple wedges and green onion.
