Chicken Baked with Olives, Lemons, and Capers

Ingredients
- 200g (6.5oz) cherry or grape tomatoes, halved
- 1/3 cup green pitted olives
- 2 tsp grated lemon rind
- 2 tbsp capers, rinsed
- 2 tbsp olive oil
- cracked black pepper and a small pinch of salt
- 2 chicken breast fillets
Instructions
Preheat oven to 425°F.
- Combine the olives, lemon rind, capers, olive oil, tomatoes, black pepper, and salt into a bowl.
- Spoon 1/2 of the mixture onto a baking dish.
- Place the chicken on top.
- Spoon the rest of the mixture over the chicken until coated.
- Place in the oven for 20 min.
- Flip chicken and cook for another 20 min, or until chicken is cooked.

We like this with baked potatoes and a salad.
