Chicken Baked with Olives, Lemons, and Capers

Ingredients

  • 200g (6.5oz) cherry or grape tomatoes, halved
  • 1/3 cup green pitted olives
  • 2 tsp grated lemon rind
  • 2 tbsp capers, rinsed
  • 2 tbsp olive oil
  • cracked black pepper and a small pinch of salt
  • 2 chicken breast fillets

Instructions

Preheat oven to 425°F.

  1. Combine the olives, lemon rind, capers, olive oil, tomatoes, black pepper, and salt into a bowl.
  2. Spoon 1/2 of the mixture onto a baking dish.
  3. Place the chicken on top.
  4. Spoon the rest of the mixture over the chicken until coated.
  5. Place in the oven for 20 min.
  6. Flip chicken and cook for another 20 min, or until chicken is cooked.

We like this with baked potatoes and a salad.
