Nut Loaf

Ingredients
Dry
- 2 cups flour
- 3/4 cup sugar
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1 cup finely chopped walnuts
Wet
- 1 egg beaten
- 1 cup milk
- 2 tablespoons vegetable oil
Instructions
Preheat oven to 350°F
- Grease and flour a 9x5" loaf pan.
- Mix dry ingredients except walnuts.
- Make a well in centre and add wet ingredients.
- Combine until dampened; do not over beat.
- Fold in walnuts.
- Bake for 50–60m until cake tester comes out clean.

Grandma’s recipe note: (I only use 1/2 tsp salt)
Freezes well.
Historical Record
When Grandma was in her 80’s this nut loaf became a regular feature served with her afternoon tea at the oak dining table. Grandma drank orange pekoe tea throughout her life, always made in a tea pot and served in tea cups. She also gave away many nut loaves as a thank you or just because she felt like it. She often joked about the hundreds of nut loaves she likely made during that period of her life.
