Ginger Molasses Cookies

Ingredients
- 3/4 cup Golden Crisco shortening
- 1 cup granulated sugar
- 1/4 cup molasses
- 1 egg
- 2 cups all purpose flour
- 2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp ground ginger
- 1/4 tsp salt
- extra granulated sugar for rolling (about 1/4 cup)
Instructions
Preheat oven to 375°F
- Cream shortening and sugar in large bowl on medium speed of electric mixer until light and fluffy.
- Add molasses and egg. Mix well.
- Combine flour,baking soda, spices and salt.
- Add to creamed mixture. Mix well. (Dough can be chilled for an hour for easier rolling, but I don’t usually bother.)
- Shape dough into 1” balls.
- Roll in sugar to coat well. Place balls on cookie sheet. (Don’t flatten; this will happen in the oven giving that cool cracked look.)
- Bake for 10-12 mins, or until set. If the cookies don’t flatten out completely, when they come out of the oven just press them lightly with a spatula.
