Sweet–Salty Roasted Walnuts

  1. Stir walnuts and salt together in a large, non-stick skillet over low heat for 10m or until nuts begin to toast and smell fragrant.
  2. Add sugar.
  3. Stir until nuts become coated with syrup (melted sugar) and start to clump and turn dark, but not burnt (about 2m).
  4. Pour onto parchment paper in a single layer.
  5. Cool.
  6. Store in an airtight container.

This recipe comes from Barbara Michel, but its origin is unknown. It was her go–to as an appetizer that came with pre-dinner champagne when she was entertaining. She also used pecans and almonds.

Robin generally got in the habit of using almonds, which work really well. It makes a great holiday season gift in a sealed see-thru plastic envelope with a cute holiday sticker.
