Sweet–Salty Roasted Walnuts

Ingredients
- 2 cups walnut halves
- 1 teaspoon sea salt
- 2 tablespoons granulated sugar
Instructions
- Stir walnuts and salt together in a large, non-stick skillet over low heat for 10m or until nuts begin to toast and smell fragrant.
- Add sugar.
- Stir until nuts become coated with syrup (melted sugar) and start to clump and turn dark, but not burnt (about 2m).
- Pour onto parchment paper in a single layer.
- Cool.
- Store in an airtight container.

This recipe comes from Barbara Michel, but its origin is unknown. It was her go–to as an appetizer that came with pre-dinner champagne when she was entertaining. She also used pecans and almonds.
Robin generally got in the habit of using almonds, which work really well. It makes a great holiday season gift in a sealed see-thru plastic envelope with a cute holiday sticker.
